In Cambridge, England, the initial intention behind establishing Kangqiao Bakery was to help fruit farmers with surplus production find sales channels. Seeing that they were working hard but losing money and affecting their livelihoods, the company provided job opportunities for the disadvantaged and used a portion of the profits to support the education of poor children.

It was with this initial intention that I began to research pineapple cakes. No matter how many difficulties I encountered or how hard it was, I have always held onto the belief of never giving up. I have been on this path since 2012.

Over the past nine years, my research has shown that fresh fruit has a very short shelf life. If it is to be sold from Taiwan to the UK, in addition to going through quarantine, the air freight costs are too high, making it difficult to compete with pineapples imported from Africa. If the surplus pineapples and various tropical fruits are made into dessert fillings (with a sugar content of about 75%), which are natural preservatives, and vacuum-packed, they can be naturally preserved for three years without spoiling. This way, they can be shipped overseas for sale, thus reducing costs and helping more fruit farmers.

Desserts are like meals for the British; they're an essential part of life. Therefore, if fruit tarts could be made into healthier, lower-sugar desserts than traditional British sweets, or suitable as banquet desserts or gifts, and sold to the British people and their children and families, coupled with the support of the local Chinese community, this would create production volume that truly helps fruit farmers. The hope is to promote the brand image of Taiwanese agricultural products and culture, thus providing the greatest benefit to Taiwanese fruit farmers.

For years, I've been researching how to ship Taiwanese pineapple filling to the UK to make pineapple cakes, thus opening up cultural channels. Air freight is expensive, but once the pineapple filling is made, the quality is consistent. We use British butter for the outer layer of the pineapple cakes, creating a mutually beneficial food culture exchange with local manufacturers. 😊

These are my research findings over the years. My next goal is to create exquisite packaging designs, incorporating cultural and creative elements, so that while selling pineapple cakes, I can also let people know about the culture of Taiwanese cuisine. In addition, I will shoot instructional videos in both Chinese and English to let more foreigners experience how to make pure pineapple cakes, so that foreigners will fall in love with Taiwanese pineapple cakes and make pineapple cakes a source of pride for Taiwan in the eyes of foreigners 🍍 Let the world see Taiwan through its delicious food.
